Organic green lentils

Waffles from Puy du Dôme and its aubergeade

Ingredients
– 180 gr of green lentil flour
– 30 g of cornstarch (or arrowroot)
– 2 tsp of baking powder
– 2 tbsp previously roasted sesame seeds
– 1/2 tsp turmeric
– 1/2 tsp paprika
- salt and pepper
– 230 ml of milk (vegetable or not)
– 50 ml of olive oil
– 2 tbsp finely chopped fresh coriander

Preparation
1. Mix the flour, starch, spices, yeast and sesame seeds. Salt and pepper. Gradually add the milk and oil. Mix with a whisk to obtain a uniform consistency. Finish by incorporating the chopped coriander. Let the dough rest for 30 min.

2. Heat the waffle iron, oil the plates and cook the dough for 2 minutes at medium power.
