Green lentil flour contains the lentil richest in iron,
in calcium and proteins. This is why we find this champion
nutrition to thicken soups and stews or in many recipes such as pancakes , bread with lentil flour and anise or even in cake recipes such as chorizo ​​and tomato cake or the economical leftover raclette cake with lentil flour .

CAKE WITH GREEN LENTIL FLOUR

Ingredients

8 parts
4 eggs

150 g of Gruyere
8 tablespoons of milk
150 g of wheat flour

50 g green lentil flour (or 50 g finely ground green lentils)
75g butter
1 teaspoon of yeast
200 g of garnish (of your choice, for me it was white ham and bacon)

Preparation


Mix the flours, eggs, melted butter, milk,
gruyere, yeast and garnish. (You can do like me

Place in a cake mold and bake in the oven at 180° for 45 min.

PUMPKIN CAKE WITH GLUTEN-FREE GREEN LENTIL FLOUR

ingredients

4 parts

100 g green lentil flour

50 g corn flour

50 g of millet cream

2 tablespoons of gluten-free baking powder
2 eggs

2 tablespoons of almond puree

200 g cooked and crushed pumpkin

6 tablespoons of already cooked peas

1 teaspoon granulated garlic
salt
pepper

Preparation


While the oven preheats to reach 150°, mix all the dry ingredients in a bowl.


Add the eggs, almond puree, pumpkin and
peas. Go, salt, pepper. Mix carefully.
